Quick and Easy Kale Chips and Kale Salad

Kale saladA great way to get kids to eat their greens is to make these fun kale chips. They are easy and quick. If I have time I marinade it overnight in the oil mixture and let them soak it up. The photo shows the extra salad I made. (just add crushed walnuts and unsweetened cranberries and some red onion)

Kale Chip Recipe

  • 1 bunch of kale, washed and dried
  • 2 tbsp olive oil
  • 1 Clove garlic
  • salt to taste
Directions
  • Preheat oven to 300 degrees. Remove the center stems and either tear or cut up the leaves.
  • Toss the kale and olive oil together in a large bowl; sprinkle with salt. Spread on a baking sheet covered in foil  (or two, depending on the amount of kale). Bake at 300 degrees for 15 minutes or until crisp.
