LUNCH – ROASTED VEGETABLES AND CHICKEN SALAD

My husband is the “rater” of the food. He is an honest “judge” and will tell me straight. This one was a success! Breakfast only scored a 6 because egg whites needed flavor.
DIRECTIONS
1. VINAIGRETTE – In a small bowl whisk 2 tsp lemon juice,2 tsp balsamic, 1 tsp Dijon Mustard, pinch of cayenne and 1/2 tsp olive oil
2. Toss in roasted vegetables with1/2 diced apple, mixed greens, 4oz diced chicken and vinaigrette
