A great way to get kids to eat their greens is to make these fun kale chips. They are easy and quick. If I have time I marinade it overnight in the oil mixture and let them soak it up. The photo shows the extra salad I made. (just add crushed walnuts and unsweetened cranberries and some red onion)
Kale Chip Recipe

1 bunch of kale, washed and dried

2 tbsp olive oil
- 1 Clove garlic

salt to taste

Preheat oven to 300 degrees. Remove the center stems and either tear or cut up the leaves.

Toss the kale and olive oil together in a large bowl; sprinkle with salt. Spread on a baking sheet covered in foil (or two, depending on the amount of kale). Bake at 300 degrees for 15 minutes or until crisp.
