Gluten free lunch made easy. My lunch today is low glycemic as well as gluten free. I aim for both of these in all my meals. I just feel better when I reduce gluten. Gluten is a protein found in wheat, rye and barley as well as some close cousins of wheat such as couscous, spelt, faro and bulgar. Gluten sensitivity comes in all shapes and sizes and can be connected to nearly all health problems.
