Most people do not know what Jicama is. It is a crisp, edible root that resembles a turnip and can be used for many things and it is ideal for a low glycemic lifestyle. Jicama will keep under refrigeration for up to two weeks and it is a great source of vitamin c and is fat free—making it a superb on-the-go snack.
Here are some of the many ways I use Jicama:
